1968 GT Fastback. Doing total restoration. Where can I purchase a frame jig or plans to build one. Have full floor pan to replace and want to make sure everything stays straight.

I personally haven't heard of anyone selling a jig or plans. I have however, heard of people jacking the cars and finding ways to bolt it to the floor so its stabilized & doesn't move.

the most safe and reliable is a company out of tennessee
called whirlyjig.com ,you can get a entry jig for around 1,000 dollars. give it a look.

You can buy a factory Rotisserie for 800 to 1000 bucks,  or you can build your own for 250 if you can weld.  Here ya go.
